Stock up on fragrant raspberries, sweet strawberries and tart cherries! This week our author Dasha Poleshchikova baked berry pies. All the recipes in the collection are quick and not too confusing – you will need to spend no more than an hour in the kitchen.

Ingredients for four to six servings

  • 300 g of any berries (raspberries, currants, strawberries, gooseberries)
  • 150 g sour cream
  • 2 eggs
  • 100 g butter
  • 1½ st. flour
  • 100 g sugar

Cooking

  1. Melt the butter in the microwave. Add one egg and 50 grams of sugar. Whisk. Add flour and knead the dough. It should not stick to your hands.
  2. Wash the berries and remove stems.
  3. Beat the egg, sour cream and the remaining sugar.
  4. Spread the dough along the bottom of the baking dish so that you get a cake with small sides. Pour in the sour cream filling. Lay berries on top. Bake at 180 degrees for about 30 minutes.

Comments

A very balanced summer cake. Fragrant sourish berries, delicate sour cream filling and crispy shortbread. Berries can be taken any. I baked with blackcurrant, gooseberries and raspberries. It also goes well with strawberries or cherries. In the off season, you can use frozen berries. They need to be thawed in advance and drained of excess juice.

Ingredients for four to six servings

  • 5 eggs
  • ¾ st. Sahara
  • ½ st. flour
  • 1 st. oatmeal
  • 300 g pitted cherries

Cooking

  1. Using a mixer, beat the eggs until firm peaks. With the mixer running, add the sugar in a thin stream. Beat for a few more minutes. You should get a fluffy white mass.
  2. Add flour and oatmeal. Gently mix the dough with a spatula or a large spoon from top to bottom so that the mass does not settle.
  3. Pour the dough into the mold. Lay cherries on top. Bake at 190 degrees for about 30 minutes.

Comments

Balance is key in this berry pie. If you add too many cherries, the dough will come out moist and not too fluffy. And if not enough – the cake will turn out airy, but rather dry. I like juicy pies more and I recommend taking more berries.

Strawberry pie with cottage cheese and streusel

Ingredients for four to six servings

  • 350 g cottage cheese
  • 3 eggs
  • 100 g natural yoghurt
  • 4 tbsp. l. Sahara
  • 7 art. l. decoys
  • 20 g butter
  • 300 g strawberries

Cooking

  1. Put cottage cheese, eggs, yogurt, three tablespoons of sugar and three tablespoons of semolina in a bowl. Beat with a blender to get a homogeneous mass.
  2. Wash strawberries and remove stems. If the berry is large, you can cut it into pieces. Add to dough and mix thoroughly. Pour the mixture into a baking dish.
  3. Prepare the streusel. To do this, in a separate bowl, mix the butter, the remaining sugar and semolina. Should be a crumb. Sprinkle the cake with it and bake at 180 degrees for about 30 minutes.

Comments

It turned out a very tender curd soufflé with a crispy crust on top. It is important that the strawberries are not overripe. So the pieces of berries will keep their shape and not spread.

Berry pie “Dream” with protein cream

Ingredients for four to six servings

  • 2 eggs
  • 180 g butter
  • 2 tbsp. flour
  • 6 art. l. Sahara
  • 300 g raspberries

Cooking

  1. Remove stems from raspberries, wash and pat dry.
  2. Separate whites from yolks.
  3. Mix softened butter, yolks, flour and three tablespoons of sugar. Knead the dough. Leave a little for sprinkling. Distribute the rest in a baking dish so that you get a cake with small sides.
  4. Beat egg whites with remaining sugar until peaks form.
  5. Put raspberries and protein cream on the cake. Spread evenly with a spatula or wide knife. Sprinkle the pie with the remaining dough. Bake at 180 degrees for 20-30 minutes.

Comments

This is my favorite berry pie recipe. Be sure to bake it every summer with any seasonal berries. It works especially well with raspberries and strawberries. In winter, this pie can be made with frozen berries or grated apple.

Cherry pie with chocolate

Mannik with cherries and chocolate

Ingredients for four to six servings

  • 2 tbsp. kefir
  • 1 st. decoys
  • ½ st. Sahara
  • 50 g butter
  • 1 egg
  • 2 tbsp. l. cocoa
  • 300 g pitted cherries
  • ½ tsp soda
  • a pinch of salt
  • vanilla on the tip of a knife

Cooking

  1. Pour semolina with kefir, mix and leave for 10-15 minutes so that the cereal swells.
  2. Whisk the egg into foam. Add sugar and melted butter. To stir thoroughly.
  3. Combine beaten egg with kefir and semolina. Add salt, soda, cocoa and vanilla. Mix.
  4. Pour half of the batter into the baking dish. Lay out the cherry and pour the filling with the remaining dough. Bake the cake at 180 degrees for about 40 minutes. Check the readiness of the dough with a wooden stick.

Comments

The dough turned out to be quite heavy, so the cake is easy to undercook. Do not rush to pull it out of the oven and be sure to check the readiness with a wooden stick – it should remain dry. Then the berry pie will come out porous, fragrant and very chocolatey. I like to serve it warm, with a scoop of ice cream.
