How to replace cream for cream

In order to make cream for cakes and other desserts, heavy cream is used for whipping. They can be replaced in two ways.

Milk and butter

You will need milk with a fat content of 2.5-3.5% and high-quality butter with a fat content of 82.5% in equal proportions.

Such milk-butter cream is thick and tender. They do not differ in taste from ordinary ones. Suitable for layering and filling desserts.

Grate the butter directly over the milk container. You can just cut it into pieces. Put the mixture in a water bath and, stirring, cook until the oil is completely dissolved. Never bring the liquid to a boil.

Pour the mass into the bowl of a blender with knives and beat for 3 minutes. You can also use an immersion blender, but there is a chance that the mixture will not reach the desired consistency. The mass must be homogeneous. Transfer to a container with a lid, close and refrigerate for 8 hours.

Then beat the mass with a mixer, like regular cream, starting at low speed. When the mixture begins to thicken, you can add sugar or powdered sugar to it. The main thing is not to overdo it with whipping homemade cream, otherwise it may delaminate.

sour cream

Sour cream can be whipped in the same way as heavy cream. But first you need to get rid of excess moisture.

Sour cream, unlike cream, will come out with a slight sourness. But it is very soft and keeps its shape well.

You will need sour cream with a fat content of 20%. From 500 g you get about 300 g thick. You can use a product with a fat content of 15%, but in this case there will be less sour cream without excess moisture.

Fold ordinary gauze in 5-6 layers and cover a colander with it. Put sour cream in there. Gather the corners of the gauze and tie at the top to form a pouch.

Hang it over a container where the liquid will drain. Leave for 6-8 hours at room temperature. If the room is very hot, put it all in the refrigerator .

During this time, the sour cream will become thick. Transfer it to a clean bowl and beat with a mixer, starting at low speed and gradually increasing. Sprinkle sugar or powdered sugar as you go. Vanillin can be added for a pleasant aroma.

How to replace cream in pasta

For this, milk mixed with butter is suitable. The principle of preparation is the same as in the method above. Only whipping chilled homemade cream is not necessary.

If you want to make the cream less greasy, change the proportions of milk and butter. For cream with a fat content of 20-25%, the proportion will be 1.5: 1 (for example, 200 ml of milk and 130 g of butter), and for a fat content of 10-15% – 3.5: 1 (for example, 200 ml of milk and 60 g of butter) .
