5 simple lunches for the office, university or school

The perfect office lunches are delicious and filling. With them, you do not need to take a queue to the microwave, but you can eat directly with your hands. We have picked up for you five recipes for “ssoboyek”, which will last for the whole working week. We will prepare a fish sandwich, a vegetarian sandwich and even puff pastries.

Sandwich with curd paste

Lunch to the office: sandwich with cottage cheese spread

Ingredients per serving

  • 2 slices of bread for toast

  • 100 g cottage cheese

  • 1 tsp sour cream

  • small bunch of dill

  • salt and pepper to taste


  1. Dry the bread in a toaster or in a dry frying pan.

  2. Finely chop the dill. Mix cottage cheese, sour cream and dill. Add salt and pepper to taste.

  3. Spread the curd mixture on the dried slice of bread. Cover with second slice.


Despite the minimum of ingredients, it turned out to be a delicious, fresh and quite satisfying lunch to the office. I liked this dish so much that I often cook it for breakfast or an afternoon snack. If you are going to eat it at home, you can not cover it with a second slice of bread – it turns out more tender and juicier.

Office Lunch: Fish Sandwich

Ingredients for 1 serving

  • small piece of fish fillet

  • 1 egg

  • 2 tbsp. l. flour

  • slice of bread for toast

  • 1 tsp sour cream

  • 1 tsp mayonnaise

  • small cucumber

  • ½ red onion

  • dried tarragon

  • salt and pepper to taste

  • frying oil


  1. Crack an egg into a deep bowl. Season with salt and lightly beat with a fork. In another bowl, mix flour and a pinch of tarragon. Salt the fish fillet on both sides. Dip in egg, then roll in flour. Fry over medium heat for 7-10 minutes on each side.

  2. Prepare the sauce. To do this, finely chop the cucumber and onion. Add sour cream and mayonnaise. To stir thoroughly.

  3. Dry the bread in a toaster or in a dry frying pan. Brush one slice with sauce. Put the fish on top and cover with a second slice of bread.


In the morning, there is hardly time to fry fish. Therefore, I often cook it for dinner, and leave a few slices to collect lunch for the office the next day. I like to use sea fish without a strong smell, such as perch or cod.

Vegetarian sandwich with vegetables and cheese

Vegetarian sandwich

Ingredients for 1 serving

  • 2 slices of bread for toast

  • bell pepper

  • small tomato

  • 50 g cheese

  • dried basil

  • 30 g butter


  1. Finely chop the tomato and pepper. Grate the cheese. Add vegetables to it and mix. Season with dried basil.

  2. Spread slices of bread with butter. Place butter side down on a baking sheet. Top with a mixture of vegetables and cheese, leaving a small distance from the edge so that the cheese does not spread. Bake in an oven preheated to 200 degrees for about 10 minutes, until the sandwiches are browned.


This recipe for a vegetable sandwich is a base that can be supplemented to your liking. For example, instead of hard cheese, add tender mozzarella. For spice, you can put olives, mushrooms or onions – you get a real mini-pizza for lunch in the office!

Sandwich with peanut butter and fried banana

Peanut butter sandwich

Ingredients 1 serving

  • 2 slices of bread

  • banana

  • 1 st. l. peanut butter

  • 20 g butter

  • cinnamon to taste


  1. Peel the banana and cut lengthwise into long slices. Fry in butter over medium heat for a couple of minutes on each side. Sprinkle with cinnamon to taste.

  2. Dry the bread in a toaster or in a dry frying pan. Spread one slice with peanut butter. Put banana on top. Cover with second slice.


This variation of the classic American sandwich is a favorite for those with a sweet tooth! Fried bananas are sweet and flavorful, and cinnamon brings out the flavor. Thanks to peanuts, these sandwiches are not only tasty, but also satisfying.

Puff triangles with onion and egg

Lunch at the office: puff pastries

Ingredients for 12-15 pies

  • 500 g frozen puff pastry

  • 4 hard boiled eggs

  • bunch of green onions

  • 1 tsp olive oil

  • 50 g butter

  • sesame

  • salt and pepper to taste


  1. Defrost the dough according to package instructions.

  2. Finely chop the onion. Peel and cut eggs.

  3. Pour olive oil into a heated skillet. Add butter to it. So it will melt, but will not burn. Put green onions in the pan. Cook over medium heat, stirring constantly, for about five minutes. Add eggs. Mix. Add salt and pepper to taste. Turn off the fire.

  4. Cut the thawed puff pastry into squares with sides of about 5 centimeters. Stretch each square slightly with your hands. Place a tablespoon of filling in the center. Fold in half to make a triangle. Pinch the edges carefully.

  5. Place the triangles on a baking sheet lined with parchment paper or a silicone mat. Leave a small space between future pies so that they do not stick together during baking. Using a brush, lightly brush the top of each pie with water and sprinkle with sesame seeds. Bake in an oven preheated to 200 degrees for about 10 minutes. The pies should rise and brown.


Such triangles can be made with different fillings. For example, with cheese and ham, with potatoes, with cabbage. But my favorite toppings are onions and eggs. It turns out tasty and satisfying, and it is prepared quickly and simply.
